Designed with input from professional luthier Marcus Bretto, these kiridashis are constructed with ease of use in mind. The five layer construction has 1095 steel on the sides, Hitachi white paper steel #2 in the center and mild steel in between. The layers are forge welded together all by hammer, fire and the hands of a craftsman. The knives are hand ground and quenched in a brine water for optimal hardness. The soft mild steel placed at the center of each bevel wears away more readily than the high carbon around it, acting as an integrated hollow grind. This helps you sharpen faster, keep a more constant bevel angle, and can even assist in keeping the surface flat. Time is money when it comes to fine woodwork. A knife like this helps to save you from wasting time at the sharpening stone.
